
Dry Ingredients
- 2 cups of oats
- 3 scoops of vanilla protein powder
- 3⁄4 teaspoon of baking soda
- 3⁄4 teaspoon of baking powder
- 1⁄2 teaspoon of salt
- 1 tablespoon of cinnamon
- 1⁄2 teaspoon of nutmeg
- 1⁄2 cup of coconut (optional)
Wet Ingredients
- 2 jars of apple sauce
- 3⁄4 cup of egg whites
- 1 teaspoon of vanilla extract
- 2 tablespoons of honey
Extra Goodness
- 1⁄2 cup of chopped apricots (can use raisins if you prefer)
- 1⁄2 cup chopped dried cranberries
- 1⁄2 cup chopped walnuts
Method
Preheat oven to 180 degrees.
In a large bowl, mix all the dry ingredients together.
In a medium bowl, mix all wet ingredients together.
Add the wet to the dry and mix to combine. Fold in apricots, cranberries and walnuts.
Drop by spoonfulls onto a baking tray lined with baking paper.
Bake for about 15 minutes or until the cookies turn brown.
Cool completely on a cooling rack. When cool they can be stored in the fridge for up to a week or freeze and use as you want them.
